Holy crumbcakes! We made hollandaise sauce over poached eggs this morning from eggs laid today and in the past few days. None of us can believe what fresh eggs really taste like or how easy homemade hollandaise is when you have high-quality ingredients. It was crazy good. Later we made Cane’s birthday cake with fresh eggs as well. Yumm – Oh!
Homemade Hollandaise Sauce
8 T (1 stick) butter
pinch kosher salt
pinch mustard powder
pinch smoked paprika (optional)
1 T lemon juice (or more to taste)
Mix all ingredients except butter and pour into blender. Melt butter until very hot but not browned. Turn on blender and drizzle hot butter into egg mixture. It will thicken and be ready in about 20 seconds. Top poached eggs and grind fresh black pepper to taste on top.
